Information design in nutrition public policies: contributions to food and beverage labeling in Brazil

Abstract

Public policies are essential to improve the health conditions of the population. Malnutrition caused by the increase in the consumption of ultra-processed foods and drinks with excess sodium, sugars, and fat is a public health problem. In this scenario, nutritional labeling of industrialized products becomes strategic to inform the population about health risks of such products, and in helping them make informed healthy food choices. This article presents contributions from the field of information design to nutritional labeling, through an experience report of the Information Systems Design Laboratory (LabDSI/UFPR). The role and participation of the Laboratory in regulatory discussions and proposals for nutrition labeling systems in Brazil and Mercosur is highlighted. Finally, the relevance of information design to health policies and the need for further research in nutritional labeling are pointed out.

Author Biographies

Carla Galvão Spinillo, Federal University of Paraná

PhD from the University of Reading – United Kingdom (2000), with a postdoctoral degree from the University of Avans – Netherlands (2010). She is a professor and researcher in information design at the Federal University of Paraná, Postgraduate Program in Design (PPGDesign/UFPR), and a collaborating professor at the Federal University of Maranhão (PPGDesign/UFMA). She has research in the area of ​​health information design with a focus on instructional design (e.g., animations, graphical interfaces).

Carlos Felipe Urquizar Rojas, University of the Joinville Region

PhD in Design, with an exchange in the Global Food Research Program at the University of North Carolina at Chapel Hill (UNC) – CAPES-PDSE scholarship, and a Master's in Information Design from the Federal University of Paraná (UFPR), specialist in Teaching in Higher Education from the Leonardo da Vinci University Center (UNIASSELVI), specialist in Creative Direction from the Institute of Studies in Architecture, Fashion and Design – Orbitato and a Bachelor's degree in Industrial Design with a degree in Visual Programming from the Instituto de Ensino Superior de Joinville (UTESC/IESVILLE). He maintains a teaching position at the University of the Joinville Region (UNIVILLE) and the Catholic University of Joinville.

Christopher Hammerschmidt, Federal University of Paraná

PhD student with an exchange at the Royal Danish Academy – Architecture, Design, Conservation, in Copenhagen (2024), CAPES-PDSE scholarship, and Master's degree from the Postgraduate Program in Design at the Federal University of Paraná (UFPR), in the Information Systems Design research line (2014). He worked as a university teacher in undergraduate courses (UTFPR and UNICURITIBA) and lato sensu graduate courses (Universidade Positivo).
